摘要:利用扩展流变仪对扁桃胶酸解液的流变学特性进行系统研究。pH值对扁桃胶溶液的流变特性影响很大。在酸性环境下扁桃胶随剪切速率的变大,剪切应力也随之变大,且增加的幅度也在变大,因此其散点图Y轴随X轴增大而呈上翘的趋势。但随着酸性的减弱,其上翘的趋势逐渐减弱,逐渐趋近于线性增长。说明随酸性的减弱,扁桃胶的水解也愈见减弱。本研究可以作为扁桃胶深度开发利用的重要依据。
Rheological properties of almond gum acid hydrolysis solution was investigated by using rheometer in the present study. The influence of the pH value of almond gum solution on the rheological properties was significant. The shear stress of almond gum increased with the shear rate increase in acid environment,and the changing range of the shear stress also increased,therefore Y-axis in scatter diagram showed an upturned trend with X-axis increase. However,with the decrease of acidity,the change of Y-axis showed a gradual weakening trend,approaching linear growth. The results suggested that with the decrease of acidity the hydrolysis of almond gum gradually weakened. This study would provide an important basis for exploration and exploitation of almond gum.
