摘要:为研究柑橘凤蝶幼虫和蛹的主要营养成分,评价其营养价值水平,采用国家标准检测方法测定柑橘凤蝶幼虫和蛹的水分、脂肪、蛋白质、矿质元素、氨基酸的含量,分析柑橘凤蝶幼虫和蛹的氨基酸分、必需氨基酸指数,并将它们的蛋白质、脂肪、矿质元素含量与常见食物的含量进行比较分析。结果表明:柑橘凤蝶幼虫和蛹的蛋白质含量分别为51.3%和64.4%、脂肪含量分别为10.0%和9.5%、碳水化合物含量分别为30.0%和21.4%、灰分含量分别为8.7%和4.7%;柑橘凤蝶幼虫和蛹的总氨基酸含量分别为354.7mg·g-1和429.9mg·g-1,必需氨基酸总含量分别为147.7mg·g-1和179.6mg·g-1,必需氨基酸占总氨基酸的比例分别为41.6%和41.8%,必需氨基酸与非必需氨基酸的比值分别为0.71和0.72,柑橘凤蝶幼虫和蛹的必需氨基酸指数均为0.87。说明柑橘凤蝶幼虫和蛹具有较高的营养价值和食用开发价值,可作为良好蛋白质源。
In order to explore the main nutritional ingredients of the larva and pupa of Papilio xuthus and to provide a theoretical basis for the edible development, the contents of fat, protein, mineral elements and amino acids in them were determined by using the national standard methods. The amino acid score and essential amino acid index were analyzed. The results showed that P. xuthus larva and pupa contain 10.0% and 9.5% of fat, contain 51.3% and 64.4% of protein, contain 8.7%and 4.7% of ash, contain 30.0% and 21.4% of carbohydrate. Their total amino acid contents are 354.7 mg·g-1and 429.9 mg·g-1,which include 41.6% and 41.8% of the essential amino acids. The element ratio of essential amino acids and nonessential amino acids are 0.71 and 0.72. Their essential amino acid indices are 0.87. P. xuthus larva and pupa have higher nutritional value and edible value which can be used as a protein source.
