摘要:环境压力和食物多元化需求推动着人类持续挖掘新食物资源。食用昆虫一直是人类饮食的一部分。近年来,食用昆虫开始由传统利用向工业化用途转变,并且发展迅速。概述了食用昆虫的概念,从食用物种、营养与健康益处以及环境可持续性(包括环境资源占用、温室气体排放、饲料转化率、废物转化与循环经济和环境安全性)3个方面综述了食用昆虫作为可持续食物资源的潜力,旨在为这种传统使用并再次挖掘的新型食物资源的兴起提供背景信息。同时,梳理了发展现状及其发展过程中2大关键障碍——接受度和法律法规监管。食用昆虫是一类优秀的可持续发展的食物新资源,其利用有助于丰富人们的食物,满足营养需求,减缓环境与资源压力,应用前景广阔。
Environmental pressures and the demand for dietary diversification are driving humanity continuously explore new food resources.Edible insects have long been a part of the human diet.In recent years,the consumption of edible insects has shifted from traditional practices toward industrial applications,experiencing significant growth.The concept of edible insects was outlined,reviewing their potential as a sustainable food resource from 3 aspects:edible species,nutritional and health benefits,and environmental sustainability(including environmental resource consumptions,greenhouse gas emissions,feed conversion rates,waste conversion and circular economy and environmental safety).The aim was to provide background information on the rise of this new food resource that was being rediscovered after traditional use.It also examined the current state of development and 2 major barriers in its development:consumer acceptance and regulatory frameworks.Edible insects represented an excellent new food resource for sustainable development.The utilization of edible insects could enrich people’s diets,meet nutritional needs,alleviate environmental and resource pressures,and hold promising prospects.
