摘要:采用正交设计对配合使用酸、碱以及加热法提取木豆叶蛋白工艺及其工艺条件进行了初步研究 ,结果表明 :木豆叶蛋白提取工艺条件为 :打浆时间 1min ,絮凝温度 80℃ ,pH值 1 0 ,料液比 1∶3;该工艺提取叶蛋白的得率为 5 1 1 % ,其蛋白质含量为 33 37% ,原料总提取率为 6 4 0 6 % .
The optimum technique and conditions of extracting Leaf Protein Concentrate(LPC)from the fresh leaves of Cajanus cauan were studied in this paper,and three methods of precipitating leaf protein with acid,alkali and heat,and the orthogonal design were utilized in this technique.The results showed that the most optimum extracting conditions included the normal temperature,the ratio of 1∶3 for fresh leaf to water,the pH of 10,the flocculating temperature of 80℃and 1 minute for the beatig times.By using this technique,about 5.11g of LPC containing about 33.37% of real protein were extracted from 100g fresh leaves and about 64.06% of total nitrogen in fresh leaf of Cajanus cauan was retrieved.
