摘要:茶油与亚麻油原料比为2∶1时,复合油脂芯材表现出复合预期的脂肪酸含量,显著的补充了茶油中亚麻酸含量不高的问题,并且提高了亚麻油的氧化稳定性,生产出的茶油亚麻油复合微胶囊产品的含油率为36.20%,微胶囊化产率为96.51%,微胶囊化效率为87.86%。茶油、亚麻油复合微胶囊化后的脂肪酸含量的变化仅在1%以下,但β-谷甾醇和α-维生素E在微胶囊化后都出现了下降。而角鲨烯的含量则出现上升。微胶囊化会使油脂初期的抗氧化性降低,但长期来看油脂的抗氧化性得到了一定的提高。微胶囊的各项性能良好,具有作为营养品开发的价值。
Tests herein described in the paper showed when the ratio of oil - tea camellia seed oil to flaxseed oil feedstock was 2:1 ;the composite lipid core material has showed that the optimum fatty acid content and the oxidative stability of flaxseed oil was improved. The content of oil in blend oil microcapsule was : 36.20%, microencapsulation yield of 96.51% and microencapsulation efficiency of 87.86%. This study found that the content of fatty acid changed within 1% after the microcapsulation, the squalene incresed in line with the contents of β - sitosterol and α- vitamin E declined,. Microencapsulation can prolong the shelf life of the oil. The microcapsules had good perform- ance and can be development as a kind of nourishment.
