摘要：采用Schaal烘箱实验法,以过氧化值为考察指标,研究不同抗氧化剂对山茶油抗氧化性能的影响。结果表明:5种抗氧化剂对山茶油均有不同程度的抗氧化作用,其中TBHQ、PA、PG、TP最佳添加量为0.020%,VE的最佳添加量为0.005%。相同添加量下,5种抗氧化剂中PG对山茶油的抗氧化效果最好,能明显抑制山茶油的氧化。复配抗氧化剂有明显的协同作用和增效作用,其中0.010%VE+0.010%TBHQ+0.010%PA+0.010%TP和0.010%VE+0.010%TBHQ+0.010%PA是最好的复配组合。
The effects on camellia seed oil of several antioxidants were studied by Schaal experiment according to the POV （ peroxide value） of camellia seed oil. The result showed that five antioxidants had protection to camellia seed oil, and the optimal dosages of TBHQ, PA, PG and TP were 0. 020% , while VE was 0.005 %. PG was the best to inhibit camellia seed oil＇ s oxidation in the condition of the same dosage. The complex antioxidant had obvious synergistic effect,and the antioxidant combined with 0.010% VE, 0. 010% TBHQ, 0. 010% PA and 0. 010% TP, and the complex antioxidant of 0. 010% VE ,0. 010% TBHQ and 0. 010% PA had the best effect.
