摘要:通过研究山桐子果不同部位(果肉和种子)油脂理化性质、营养品质及抗氧化能力,发现其均存在显著差异。果肉是粗脂肪主要来源,其含油率高达37.01%。不同部位山桐子油色泽具有明显差别,果肉油呈暗红色(a*为41.83),种子油呈橙红色且较清亮(L*为63.88,b*为106.31)。研究发现,干燥处理的山桐子果不同部位油的酸值均较高,果肉油和种子油分别为6.78、4.18 mg/g。山桐子果不同部位油中脂肪酸含量最高的是亚油酸,分别为71.66%、83.27%,且种子油多不饱和脂肪酸和总不饱和脂肪酸含量远远高于果肉油。果肉油中α-生育酚和β-谷甾醇含量较高,分别为148.41 mg/100 g和401.32 mg/100 g,但种子油中总酚比果肉油高,为104.73μg/g。种子油氧化稳定性和ABTS自由基清除能力较高,分别为14.89 h、675.77μmol TE/100 g。通过主成分分析综合比较,果肉油的品质较优。
The physicochemical properties,nutrient contents and antioxidant capacity of Idesia polycarpa Maxim.pulp oil and seed oil were studied,and it was found that there were significant differences.The crude fat mainly came from the pulp,and its oil content was as high as 37.01%.The color of them was obviously different that the pulp oil was dark red(a*was 41.83)and the seed oil was orange red and bright(L*was 63.88,b*was 106.31).It was found that the acid value was as high as 6.78mg/g and 4.18mg/g,respectively.The highest fatty acid of different oils was linoleic acid,71.66%in pulp oil and 83.27%in seed oil.The polyunsaturated fatty acid and total unsaturated fatty acid of seed oil were higher than that of pulp oil.The content ofα-tocopherol andβ-sitosterol in pulp oil were higher,148.41 mg/100 g and 401.32 mg/100 g,respectively,but the content of total phonel in seed oil was the highest that 104.73μg/g.The oxidation stability and the ABTS radical scavenging ability of seed oil were 14.89 h and 675.77μmol TE/100 g respectively,which were better than that of pulp oil.But the quality of the pulp oil was better than seed oil through the comprehensive comparison of principal component analysis.
