摘要:采用不同浓度的漂白紫胶溶液对甜樱桃(Prunus avium L.)进行涂膜保鲜处理,研究常温条件下漂白紫胶对樱桃保鲜效果的影响。结果表明,常温条件下漂白紫胶涂膜保鲜对降低樱桃呼吸强度、减缓樱桃失水与腐烂具有明显的作用,同时也保持了果实较好的内在品质。2.0%的漂白紫胶与1.5%的CaCl2结合处理对樱桃的保鲜效果最好,常温贮藏10 d,该处理样品的失水率、腐烂指数与对照相比分别降低了48.33%、74.37%,差异达极显著水平(P<0.01);可溶性固形物含量、可滴定酸含量、VC含量、硬度分别比对照提高了7.78%、20.00%、29.92%、21.31%,其中VC含量与对照差异达到极显著水平(P<0.01)。
Sweet cherry were coated with different concentration of bleached shellac at room temperature in this experiment. The results showed that bleached shellac was effective on reducing respiration intensity, inhibiting the loss of water and the rot of fruit. Meanwhile, the quality of fruit was still well. The appropriate coating was mixture of 2.0% bleached shellac and 1.5% CaC12. When the treated sweet cherry were stored for 10 days, compared with control, the loss of water reduced 48.33% , the rot index reduced 74. 37%. Their difference were significant at 0.01 level, the content of soluble solids increased 7.78% , titratable acidity increased 20. 00% , Vc increased 29.92% and the firmness increased 21.31%. In these indexes, the difference of Vc was also significant at 0. 01 level.
